Chickpea & Lentil Burger’s; with Spicy Guacamole.

I’ve been a tad lazy with my posts lately. I’ve been caught up with a few things and I haven’t had much time. But today I do and I bring to you: Chickpea & Lentil Burgers; with spicy guacamole. I made these a few weeks ago and they were delicious: full of flavour and perfect. I don’t mind eating pre-made burgers from the freezer section, but I do like to make my own, fresh burgers, when I have the time and that’s mainly because I enjoy cooking and experimenting with new things. These Chickpea and lentil burgers were new to me. I hadn’t really made my own vegetarian burgers before and they turned out to be quite successful. I say quite because some were a bit flimsy and did break, but I think that may be due to the burgers not being equal in size or not cooked for long enough. The chickpea and lentil burgers did take a while to prep and make, but when your bored or have time, then I feel it’s nice to make an effort to cook something nutritious and delicious. To make these chickpea and lentil burger’s you will need a food processor or blender, and also some cooked red lentils. I made the mistake of forgetting to cook the lentils and then they took even longer to cook in the frying pan, so remember to do this.

Yield – 6 Burgers

  • 1/2 cup cooked red lentils
  • Burger Rolls – Wholemeal, Ezekiel, White.
  • 1.5 cups Cooked or canned chickpeas
  • 1/4 Coconut flour
  • 1 Peeled Carrot
  • 1/2 white onion
  • 2 free range eggs
  • 2 Garlic Cloves
  • Handful of fresh coriander
  • 1 tsp Sriracha or chilli sauce
  • Salt and Pepper to season

Spicy Guacamole

  • 1 Ripe Avocado
  • 1 tbsp Lemon Juice
  • 1/2 tsp Chili Power of flakes
  • 1/2 tsp Cumin
  • 1/2 tsp Coriander
  • 1 Garlic Clove
  • 3 tbsp Olive Oil
  • Salt and Pepper to season

Instructions  Firstly you will need to peel and grate the carrot, then transfer to a separate bowl. Peel and finely chop the onion and garlic and add to the bowl with the carrot. Now add the cooked lentils and chickpeas to the food processor, along with; eggs, coconut flour, herbs and spices, salt and pepper. Process the ingredients until you have a thick, but chunky consistency. Stir the grated carrot, onion and garlic into the chickpea and lentil mixture. If you have a pattie mould it will be easier to make the burgers: equal and round. But if not, simply divide the mixture and make 6 round patty’s as best, as you can. I used a cookie cutter as my mould. In a cast iron or frying pan, add a little olive oil or butter and heat on a low to medium heat. When the pan is hot enough add your burgers; in batches if you prefer and cook on both side’s, until they are golden brown and firm. This should be about 5 minutes. Make sure the heat isn’t too high, as you don’t want to burn your burger’s. Now that your chickpea and lentil burger’s are cooked, transfer them to a cooling rack and make your spicy guacamole.

Spicy Guacamole Directions. First you will need to cut  your avocado in half. To do this simply cut with a sharp knife the entire circumference of the avocado, twist the avocado and the two halves should come apart, if not you either haven’t cut it enough or the avocado is not ripe enough. Next scoop out the avocado from it’s shell, dice and place in the food processor, with all the remaining ingredients. Process the ingredients until smooth or chunky. It’s up to you. Now to layer your burger: Slice a burger roll, add some lettuce or salad; your burger, a healthy amount of spicy guacamole and enjoy.
