Taco, Nacho Bowl.

About two years ago I was following a low carb, high fat diet and I pretty much lived off taco bowls. They were just so easy to make and full of flavour and different textures. These days I’m all about the carbs so this bowl was a lot of fun, not only to construct, but to eat. Just like all my recipes, this is easily adapted to suit your needs and if you eat meat then just substitute the Quorn mince for your choice of meat. 

Ingredients: Taco Mix

  • 160g Quorn Mince
  • 80g Thinly Sliced Sweet Potato
  • 60g Cous Cous or Brown Rice
  • 20g – 30% Less Fat Mature Cheddar
  • 1/2 Vegetable Stock Cube
  • 1 tsp – Lime Juice
  • 1 tsp Olive Oil
  • 1 tsp Reduced salt soy sauce
  • 45g Fage 0% Greek Yogurt
  • 1/2 White Onion
  • Bell Peppers
  • 130g Passata or chopped tomatoes.
  • Garlic clove
  • Fresh coriander
  • 1/2 tsp cumin
  • 1/2 tsp ginger
  • 1/4 tsp paprika
  • 1/2 tsp chilli flakes
  • Salt and pepper to taste

Salad

  • 50g Lettuce
  • 50g Cucumber
  • 50g Cherry Tomatoes
  • 25g Red Onion
  • 1 tbsp of Reduced Fat Salad Dressing

Directions 

Place your thinly sliced sweet potato on a greased baking tray and place under the grill on a low heat until they start to curl and crisp. They will burn so keep an eye on them.

Following that, heat the olive oil in a frying pan and add the chopped bell pepper, garlic, cumin, chilli flakes, paprika and ginger. When the bell peppers start to soften, you can add in the diced onion until it starts to soften, then the defrosted Quorn mince.

Next add the soy sauce to the frying pan, as well as the passata and leave to simmer.

Now you can prepare your salad and cous cous. I used – lettuce, cucumber, cherry tomatoes, and red onion – but you can use whatever you fancy.

In a separate bowl add hot water and a stock cube to the cous cous, cover with a tea plate or lid and leave to cook.

By this point your taco mix should be cooked so you can start layering your bowl with the salad, cous cous, taco mix,  sweet potato nachos and top it all off with a squeeze of lime, grated cheddar and greek yogurt. Guacamole would also be incredible on this too, as well as salsa. Have fun with it and make it a fiesta.
