Homemade jam is so easy to make and it not as time consuming as one may think either, plus, it’s perfect for using up old fruit that you may have laying around.I found a punnet of blueberries at the back of my fridge this morning, about to go bad. There’s nothing worse than when that happens, especially the price they are today. So instead of throwing them away, I made them into blueberry and lemon jam.
- 200g Blueberries
- 2 Tbsp Fresh Lemon Juice
- 1/2 Cup Water
- 1/4 Cup Raw Cane Sugar or Sweetener of choice
Add all of the ingredients, minus the lemon juice, to a saucepan and bring to a boil. Leave the jam boil until the water evaporates and you are left with a thick blueberry jam.
The secret to knowing if the jam has set, is to coat the back of a spoon with the jam, if it slides off slowly and gradually, then it’s done. Stir in the lemon juice last.
Make sure you place the jam in a sterilised jar and store in the fridge.
