Easy Baked Pumpkin Spice French Toast

french toast 2.1.jpgThis is a simple pumpkin spice French toast recipe that I whipped up one morning, last week and one which I have been meaning to share ever since.

Rather than fry the french toast in a frying pan or skillet, like a traditional french toast recipe; I baked the pumpkin spice French toast instead and it turned out just as good.frenchtoast2.3.jpgAnyway, with maple syrup, vegan butter and pumpkin seeds thrown on top, this is one autumnal breakfast you wouldn’t want to pass up.

Ingredients

Toppings

  • Vegan Butter
  • Maple Syrup
  • Cinnamon
  • Pumpkin Seeds (crushed)

Directions

Prepare the French toast the night before – slice the bread and add it to an ovenproof dish with the basic custard and pumpkin spice.  Before covering the dish with foil and placing it in the fridge overnight make sure that both sides of the bread have been coated with the custard.

Pre-heat an oven to 185c (fan assisted) and line a baking tray with greaseproof paper. Next, spray the tops of the French toast with some low-fat coconut oil spray and bake for around 15 minutes – you will need to turn the French toast half way through the cooking process, so that both sides are cooked and crispy.

Now all that’s left is to add the toppings and enjoy.
