Hi. I’m Leah and the founder of The Hungry Welsh Girl. I first started this blog back in 2014 when I discovered a passion for cooking and developing new recipes, as well as photography: all three have now become a huge part of who I am and also what I am known for, among my community and family.
When I first started The Hungry Welsh Girl, I was a vegetarian and had been for ten years: developing balanced, but nutritious recipes for vegetarians and myself, with the odd vegan recipe too. However, it wasn’t until Christmas 2015 when I first started considering veganism and it wasn’t until the start of 2016 when I fully embraced lifestyle and went vegan. I was then faced with a whole world of new challenges in my kitchen that wasn’t always so difficult as a vegetarian: solely developing vegan food. It has been a fun year in The Hungry Welsh Girl’s kitchen, but also a rewarding one too, especially
when I have people enjoy the food I create and ask me to make more.
My aim with The Hungry Welsh Girl has always been to create delicious and comforting recipes, that may have a hint of nostalgia – from our childhoods – thrown in here and there. I want to prove that vegetarian and veganism isn’t boring, and that we don’t always eat boring salads and vegetables. But, also cakes and cookies too.
