IMG_5525.jpgAfter letting my depression get the best of me the last 2 years, I lost interest in posting to the blog and sharing any recipes at all. My eating and diet also went out the window and I couldn’t find any motivation to cook or eat as healthy as I usually would. Thankfully, we are now in a new decade and I’ve started to feel a bit more like myself again, so when better to share my vegan recipes than during veganuary. Plus, it’s a kick up the butt to start eating better myself and including more wholesome, plant-based recipes into my diet again.

Veganuary: Where Do You Get Your Protein From?

I get messages quite often from people, through Instagram, asking me to help them with vegan protein sources. So I ran a poll on my Instagram stories, last Thursday, to find out whether there were others who would like me to put together a blogpost with easy to find, basic protein sources too. Boozy Mince Pie Filling

 

MincePies3.jpgChristmas is only 5 days away and I’m still not feeling even the slightest bit Christmassy yet –  I rarely do anymore. Christmas is definitely a holiday for the kids rather than us older folk. So instead, I focus on the food and I celebrate each year by making my favourite Christmas recipes that I have created and re-created over the years and this mince pie filling is definitely my favourite and most used Christmas recipe. Spaghetti Squash in a Mushroom,Garlic & Parsley Cashew Sauce

dsc_1655A few years ago I fell in love with gardening. I grew everything from chilli peppers, courgettes and herbs; to pak choi lettuce and spaghetti squash. It was an effort and a lot of hardwork, which was made harder by the fact that I had to use plant pots to grow my crops.  Nonetheless, I persevered and nurtured my plants like a new mother and received an abundance of squash and other vegetable that Summer. Thick, Gooey Chocolate Chip Porridge.

I don’t really enjoy porridge that much anymore. I think it’s because I ate it every morning for breakfast for the best part of two years and I just slowly got tired of it. Now, I crave savoury food for breakfast and I try my best to keep it as interesting as possible so that I don’t get bored or fed up of eating the same foods over and over again: like I did with porridge.
