Guys. I’m one of those weirdos who loves chickpeas. I could eat them with every meal and for the most part I do. But what’s even more odd, is that I have been craving these chickpea cookie bars all weekend. And when I finally got hold of some chocolate yesterday, today I was only too excited to throw a batch of these together and dive straight in. Continue reading “Chickpea Cookie Bars”
Cherry Bakewell Chia Porridge
A favourite of mine lately and a classic combination when it comes to baking – Cherry Bakewell. I had every intention of making a cherry Bakewell pie when I purchased the almond extract a few months ago. However, my efforts to avoid creating anything with more steps than a pavement, are quite resilient. Continue reading “Cherry Bakewell Chia Porridge”

Boozy Mince Pie Filling
Christmas is only 5 days away and I’m still not feeling even the slightest bit Christmassy yet – I rarely do anymore. Christmas is definitely a holiday for the kids rather than us older folk. So instead, I focus on the food and I celebrate each year by making my favourite Christmas recipes that I have created and re-created over the years and this mince pie filling is definitely my favourite and most used Christmas recipe. Quick Sage & Apple Stuffing
I was never going to post a stuffing recipe like this one; as it is so basic. However, I was writing up the recipe for my ‘bacon’ wrapped roast with sage and apple stuffing, last year and I felt like it would be easier to have a separate page for this recipe, since the roast post was already quite long. Continue reading “Quick Sage & Apple Stuffing”
Spaghetti Squash in a Mushroom,Garlic & Parsley Cashew Sauce
A few years ago I fell in love with gardening. I grew everything from chilli peppers, courgettes and herbs; to pak choi lettuce and spaghetti squash. It was an effort and a lot of hardwork, which was made harder by the fact that I had to use plant pots to grow my crops. Nonetheless, I persevered and nurtured my plants like a new mother and received an abundance of squash and other vegetable that Summer. Higher Protein Peanut Butter Cups
One of the most popular chocolate treats today are peanut butter cups. They are highly addictive to many peanut butter lovers out there and I don’t blame them. As a vegetarian I loved them too and I would never pass an opportunity to stick them on my oats or eat them as they were. Continue reading “Higher Protein Peanut Butter Cups”
One-Pot Vegan Ramen.
For a while now, I have been craving a big bowl of ramen noodles with copious amounts of soy sauce and broth for dipping, accompanied with a nice wedge of crusty ‘buttered’ bread – it’s weird because I’ve never actually had ramen before. So, I can only assume that I’ve actually been craving what I grew up on and that’s instant noodles. Continue reading “One-Pot Vegan Ramen.”
Thick, Gooey Chocolate Chip Porridge.
I don’t really enjoy porridge that much anymore. I think it’s because I ate it every morning for breakfast for the best part of two years and I just slowly got tired of it. Now, I crave savoury food for breakfast and I try my best to keep it as interesting as possible so that I don’t get bored or fed up of eating the same foods over and over again: like I did with porridge. Continue reading “Thick, Gooey Chocolate Chip Porridge.”
Spicy, Smoky Beans
Baked beans are a staple in my diet these days and I didn’t actually start liking them until around three years ago. Now, I eat them most days and I don’t care what time of the day it is. Continue reading “Spicy, Smoky Beans”
