Christmas is definitely a holiday for the kids rather than us older folk. Spaghetti Squash in a Mushroom,Garlic & Parsley Cashew Sauce

dsc_1655A few years ago I fell in love with gardening. I grew everything from chilli peppers, courgettes and herbs; to pak choi lettuce and spaghetti squash. It was an effort and a lot of hardwork, which was made harder by the fact that I had to use plant pots to grow my crops.  Nonetheless, I persevered and nurtured my plants like a new mother and received an abundance of squash and other vegetable that Summer. One-Pot Vegan Ramen.

IMG_9392.JPGFor a while now, I have been craving a big bowl of ramen noodles with copious amounts of soy sauce and broth for dipping, accompanied with a nice wedge of crusty ‘buttered’ bread – it’s weird because I’ve never actually had ramen before. Thick, Gooey Chocolate Chip Porridge.

I don’t really enjoy porridge that much anymore. I think it’s because I ate it every morning for breakfast for the best part of two years and I just slowly got tired of it. Now, I crave savoury food for breakfast and I try my best to keep it as interesting as possible so that I don’t get bored or fed up of eating the same foods over and over again: like I did with porridge. Traditional Welsh Cakes.

welshcakes.jpgBeing welsh, you would expect me to know better. You’d expect me to want to re-create traditional Welsh recipes and make them vegan and you’d likely expect them to still be tasty and delicious -right? For the most part I do try. But sometimes I get it wrong. Take last year for example.  Last year I made a massive faux-par and I turned a traditional welsh cake into a bloody travesty – I tried to make it healthier, vegan, low carb, low-fat and also gluten free – the outcome: less than impressive. If you scroll aimlessly through social media: whether it be Instagram, Facebook, or Twitter; you will likely fall on a post where some fitness freak is spouting tosh about finding balance in their life and everyone should do this, that, and the other to achieve it too.
