I love tofu scramble. It’s one of my favourite ways to get in protein and when done right it can be very tasty. I especially love it as part of a full breakfast, or as a breakfast bowl with avocado and chunked potatoes. Continue reading “Tofu Scramble”
I have a really good korma recipe that I have perfected over the years, based on how I remember it tasting when my mother used to make it for us as kids. But unfortunately mine has quite an extensive list of ingredients and if I haven’t pre-prepped the korma paste for my freezer beforehand, then I don’t often get to enjoy it. However, this 10 minute curry is a saviour for when I want a curry in a hurry and combined with 2 minute microwave rice, you can have a good, nutritious vegan meal in less than 15 minutes. After letting my depression get the best of me the last 2 years, I lost interest in posting to the blog and sharing any recipes at all. My eating and diet also went out the window and I couldn’t find any motivation to cook or eat as healthy as I usually would. Thankfully, we are now in a new decade and I’ve started to feel a bit more like myself again, so when better to share my vegan recipes than during veganuary. Plus, it’s a kick up the butt to start eating better myself and including more wholesome, plant-based recipes into my diet again.
I’m a sucker for instant gravy: it’s quick, easy and it doesn’t taste all that bad. However, you can’t beat a good homemade gravy, it’s just a bit of a faff to prepare. So this year, I’m try to spend as little time in the kitchen as possible, while still preparing delicious food and for the most part I’m doing alright. My prep is always done the week leading up to Christmas Day, so all I really have to do is heat the gravy and enjoy.
Today, is my three year veganniversary. And I haven’t died. I’m not protein deficient or anaemic and I feel healthier than I have done in years. So, I thought I would celebrate my survival by sharing a brownie recipe. Continue reading “Chocolate Hazelnut Brownies.”
Guys. I’m one of those weirdos who loves chickpeas. I could eat them with every meal and for the most part I do. But what’s even more odd, is that I have been craving these chickpea cookie bars all weekend. And when I finally got hold of some chocolate yesterday, today I was only too excited to throw a batch of these together and dive straight in. Continue reading “Chickpea Cookie Bars”
If you have stopped by my blog because you found yourself drooling over a truly indulgent, glorified chocolate bar, while you were idly scrolling through Pinterest or Instagram this afternoon: complete with a creamy layer of your favourite nut butter. Well, guys, this is not a ruse, you have come to the right place – I got you covered, boo! Continue reading “No-Bake Chocolate Hazelnut Butter Bites”
As someone who works out 5 days a week, while also trying to eat in a calorie surplus: to gain muscle and strength. It can be hard not to get lazy and solely rely on protein powder when it comes to a post-workout meal (lunch). Which is why I like to keep a tub of this chickpea may-o in my fridge, for those times when I’m hangry and need food fast. Continue reading “Chickpea May-O”
A favourite of mine lately and a classic combination when it comes to baking – Cherry Bakewell. I had every intention of making a cherry Bakewell pie when I purchased the almond extract a few months ago. However, my efforts to avoid creating anything with more steps than a pavement, are quite resilient. Continue reading “Cherry Bakewell Chia Porridge”
I get messages quite often from people, through Instagram, asking me to help them with vegan protein sources. So I ran a poll on my Instagram stories, last Thursday, to find out whether there were others who would like me to put together a blogpost with easy to find, basic protein sources too. And 98% of you voted yes – the other 2% were contrary meat eaters, who felt it necessary to vote nonetheless. Continue reading “Veganuary: Where Do You Get Your Protein From?”
