I have a really good korma recipe that I have perfected over the years, based on how I remember it tasting when my mother used to make it for us as kids. But unfortunately mine has quite an extensive list of ingredients and if I haven’t pre-prepped the korma paste for my freezer beforehand, then I don’t often get to enjoy it. However, this 10 minute curry is a saviour for when I want a curry in a hurry and combined with 2 minute microwave rice, you can have a good, nutritious vegan meal in less than 15 minutes. Savoury Chickpea Waffles
After letting my depression get the best of me the last 2 years, I lost interest in posting to the blog and sharing any recipes at all. My eating and diet also went out the window and I couldn’t find any motivation to cook or eat as healthy as I usually would. Thankfully, we are now in a new decade and I’ve started to feel a bit more like myself again, so when better to share my vegan recipes than during veganuary. Plus, it’s a kick up the butt to start eating better myself and including more wholesome, plant-based recipes into my diet again.
Creamy Leftover “Turkey” Soup with Buttery Dumplings.
This creamy veggie soup has been a firm favourite of mine for a while now, it’s filling, satiating, and full of protein and nutrition. A nourishing soup is something I always feel like I need during the month of December and I know I’m not alone when I say that.

Easy Red Wine & Onion Gravy
I’m a sucker for instant gravy: it’s quick, easy and it doesn’t taste all that bad. However, you can’t beat a good homemade gravy, it’s just a bit of a faff to prepare. So this year, I’m try to spend as little time in the kitchen as possible, while still preparing delicious food and for the most part I’m doing alright. My prep is always done the week leading up to Christmas Day, so all I really have to do is heat the gravy and enjoy.
Cranberry & Orange Sauce
Eating cranberry sauce with my Christmas dinner has been a new experience for me the last couple of years, but definitely one I wish I had started sooner as it’s delicious and pairs well with my bacon wrapped roast with sage and onion stuffing. But more importantly, its really easy to make. Continue reading “Cranberry & Orange Sauce”
Rosemary & Red Onion “Sausage” Stuffing Balls
With only one week left until Christmas, food prep is in full swing and I can safely say that I am right on top of things this year. I’m probably the most organised I’ve ever been at Christmas and I’ve even had these rosemary and red onion sausage stuffing balls prepared and sat in my freezer since the beginning of the month.

Boozy Chocolate Coated Christmas Truffles
You can’t beat a chocolate truffle at Christmas time, especially ones spiked with Baileys and drizzled with white chocolate. You will easily win over my ice cold heart with that combination. I’ve already made these truffles twice this month too and as you can imagine, neither batch have lasted me very long and now I’m being asked to make more for Christmas. So I think that’s enough clarification that these truffles are delicious.

Mince Pies with a Boozy, Nutty Twist.
I spent the weekend writing my Christmas recipes and scheduling them on the blog, when I realised that I have never posted my full mince pie recipe and I LOVE my mince pie recipe. It’s one of the only Christmas recipes on my blog that I make every year, without fail and they always go down well with all of the family. Continue reading “Mince Pies with a Boozy, Nutty Twist.”
Vegan Banana Pie French Toast
