It’s been a while since I posted anything to the blog, over a year I think, so I thought I would kick off my return with a vegan French toast recipe that anyone can make.
- Thick Bread
- 150g Plain Flour
- 100g Ripe Banana
- 80g Cashew Butter
- 2 Tbsp Caster Sugar
- 1 Tsp Vanilla Extract
- 1/2 Tsp Cinnamon
- 1/2 Tsp Baking Powder
- 250ml Almond Milk
Add all of the ingredients to a blender and blend into a smooth batter.
Now add your bread into a long dish and pour the batter over your bread. Leave to stand for 30 minutes or overnight.
Heat a frying pan on a medium heat and fry your French toast both sides until golden brown and crispy.
Top with coconut cream, blueberries and flaked almonds.
