Vegan Banana Pie French Toast


109F8032-2AE2-4C19-AAF3-FB4B3B61786E.jpegIt’s been a while since I posted anything to the blog, over a year I think, so I thought I would kick off my return with a vegan French toast recipe that anyone can make.


  • Thick Bread
  • 150g Plain Flour
  • 100g Ripe Banana
  • 80g Cashew Butter
  • 2 Tbsp Caster Sugar
  • 1 Tsp Vanilla Extract
  • 1/2 Tsp Cinnamon
  • 1/2 Tsp Baking Powder
  • 250ml Almond Milk


Add all of the ingredients to a blender and blend into a smooth batter.

Now add your bread into a long dish and pour the batter over your bread. Leave to stand for 30 minutes or overnight.

Heat a frying pan on a medium heat and fry your French toast both sides until golden brown and crispy.

Top with coconut cream, blueberries and flaked almonds.
