Veggie Tacos with Guacamole & Salsa

FAD8ADCC-F0BF-47E6-B9A0-018336F58DDCI’ve been making this taco mix for years and years. I love it. I love it in tacos and I love it as part of a taco bowl. What’s more is that it’s really easy and quick to make, which is how I like to roll these days.

  • 300g Veggie Mince
  • 1 Large Onion
  • 1 Red Bell Pepper
  • 2 Tsp Chopped Garlic
  • 2 Tsp Ground Cumin
  • 1 Tsp Ground Ginger
  • 1 Tsp Chilli Powder
  • 1.5 Tbsp Smoked Paprika
  • 2 Tsp Oregano
  • 2 Tbsp Olive Oil
  • 100g Passata or Chopped Tomatoes
  • 1 Tin Black Beans
  • 1/2 Tsp Sea Salt (or season to taste)
  • 1/4 Tsp Black Pepper

Directions

Pre-heat a sauté pan with the olive oil and when hot enough add in the spices and garlic, cook them off for a few seconds before adding the finely chopped onion and bell pepper. Cook until they have softened, but still have a little crunch. 

Now add in the veggie mince and sauté, when the mince has cooked you can pour in the pasatta, sea salt, black pepper, black beans and oregano.

When the black beans have warmed through you can remove the pan from the heat and serve in mini tortillas with fresh salsa and guacamole.

Extra Ingredients

  • Mini Tortillas
  • 2 Large Avocado
  • 2 Tbsp Lime Juice
  • 1.5 Tsp Chilli Flakes
  • Sea Salt to taste

Ingredients:Salsa

  • 1 Tin Chopped Tomatoes
  • 1/2 Red Bell Pepper
  • 1 Small Red Onion
  • 100g Fresh Tomatoes
  • 1 Tbsp Jalapeños
  • 2 Tbsp Tomato Purée
  • 2 Lime Juice
  • 2 Tsp Garlic
  • 1/2 Tsp Chilli Powder
  • 1 Tbsp Coriander

Finely chop up the onion, bell pepper and fresh tomatoes, toss them into a bowl with the remaining ingredients. The salsa tastes better when the bell pepper and onion have sat for a bit and softened naturally.
